FUEL | 3 Ingredient Breakfast Pumpkin Bites
Been making these crazy easy baddies for 3 weeks, because, well FALL, pumpkin everything, & it saves on calories compared to muffins from the local coffee shop.
Super easy & pairs well w/boiled egg whites for a quick breakfast on the go!!
– 1 Cup Kodiak Cakes Pumpkin Mix
– 2-3 Medium sized cooked & mashed sweet potatoes
– .5 Tbsp brown sugar
– Optional: Pumpkin spice, maple syrup, almond/granola for topping, orange juice or water if need more liquid
– OPTION: Protein swap! 1/2 Cup Kodiak Cake Pumpkin Mix, 1/2 Cup vanilla protein powder
HOW TO MAKE THIS MAGIC
Set oven to 350 degrees
Mix all ingredients in a bowl
Spoon into non-stick mini-muffin trays
Bake on 350 degrees for 20-25min
OPTIONAL: Top with Granola and almonds
